Punjab, a state in northern India, has endured immense pain and loss, especially during the Partition. It is home to the site of the tragic Jallianwala Bagh Massacre, yet also the birthplace of Sikhism, a faith rooted in compassion and service. Every Gurudwara (place of worship in Sikhism) in the world serves only vegetarian food just so they can welcome & feed everyone regardless of faith or ethnicity, in a spirit of unity.

Rich in history, culture, and agriculture, Punjab is known as the 'Food Basket of India' for its fertile lands. Its vibrant music has touched hearts across the globe. Despite facing numerous challenges, Punjab's resilient people and culture continue to thrive, embodying strength.

Punjabi food is the most popular regional speciality when it comes to Indian food. In fact, you may be familiar with some of its iconic dishes like butter chicken, tandoori chicken, dal makhani, and paneer kofta. 

 

My aim here is to introduce you to something beyond this. I am aware that four or five dishes do not represent a region well, but I am doing my best to give you a glimpse by choosing as varied dishes as possible while making sure the dishes I choose represent the cuisine well. 

 

We have tried to assemble a list of some staple dishes in Punjabi households, along with a few cult chef/restaurant-created dishes from this region. 

 

I hope you enjoy them. Doing the specials has become my most enjoyable task associated with Clay’s as I am also learning so much about different regions of India.
